What's that inside my business card?

I got some awesome new business cards made, but due to lockdown, I can't hand them out 😖 But at least I can share them with you virtually!


I shared a little video of my card on my socials, and everyone's been asking for the mini recipes I squeezed inside the card - so here they are! I've made them simple and easy, and of course delicious.


(Overnight) Brekky Bircher Muesli

Ingredients

• 8 tbsp rolled oats

• 4 tbsp buckwheat

• 4 tbsp shredded coconut

• 1 tbsp pepitas

• 1 tbsp chia seeds

• 1 tbsp psyllium

• 1 tbsp of linseeds

• 1 tsp of cinnamon

• sprinkle of almonds

• sprinkle of dried cranberries

• juice of 3 oranges

Method

• combine all ingredients in sustainable container and refrigerate

• serve ⅓ cup with 2 tbsp of your fave yoghurt and a handful of berries


(Easy-Peasy) Kale Pesto

Ingredients

• bunch of kale

• bunch of basil

• 1/3 cup of pine nuts

• 1/3 cup olive oil

• 1 tsp minced garlic or 2 crushed garlic cloves

• 1/2 cup chopped parmesan cheese

• squeeze of lemon

• 1 tbsp nutritional yeast flakes

• 1/2 avocado

Method

• combine kale, basil, nuts, oil, garlic, parmesan, lemon juice and yeast flakes in a food processor and process for 2 minutes

• once completely combined throw in the avocado for added creaminess

• serve through al dente pasta and sprinkle with more parmesan to garnish


(No Fuss) Choc-Peanut Slice

Ingredients

• 1/2 cup raw peanut butter

• 1/4 cup melted coconut oil

• 4 dates finely chopped

• 2 tbsp cacao powder

• 1 tbsp raw honey or maple syrup

• dash of salt

• handful of peanuts (to sprinkle)

Method

• combine peanut butter, oil, dates, cacao powder, honey, salt in a bowl and stir well

• line a sustainable container with baking paper and pour peanut butter mixture in

• sprinkle with nuts

• refrigerate for at least an hour before chopping and serving
