Evie's Apricot and Coconut Squares

Evie and I made this one up this morning. Just a harmonious mixture of dried fruit, coconut oil and oats, smashed together in a food processor. A lovely little, chewy snack on the go at the park, or at home in between playing "tea" or having a swim. My toddler in particular is a busy little monster, I'm always losing her in the house (mostly in wardrobes), or chasing her at the park - we've had many near misses of being taken out by those metal whirly things or someone on a swing - yikes! To keep her going, the glucose in the dried fruit, coupled with the protein in the oats is the perfect snack to keep her energised and momentarily stops her from saying "more" while holding those chubby little arms out.

Apricot and Coconut Squares

Ingredients

• 1 cup of dried apricots

• 1/2 cup dates

• 1/2 cup coconut

• 1/2 cup rolled oats

• 1 tbsp coconut oil


Method

• Combine all ingredients in a food processor and blend for 3 minutes or until it's about to become a ball.

• Push into a lined Tupperware, put the lid on and refrigerate for 30 minutes.

• Cut into little squares and eat. Put back in the fridge for another snack.
