I have 2 teenagers (step), so you can just imagine the amount of insta-worthy smashed avocado we consume (insert face slap). So when I'm making burrito bowls, I literally need to bags the avos for the guacamole.
Burrito Bowls are a winner with the fam-bam, we get to build our own, choose from a range of ingredients, take pride in the beauty of our prepared bowl and have an excuse to use our fingers which means we get to feel the texture of our food.
Tuesday nights are tight, you know the story. We get home late from soccer training, we fight to get showers and pj's on, whilst I'm trying to get dinner on the table by 6pm so that we can still have bodies in bed by 7pm. So, with a bit of morning prep, burrito bowls are a super easy, delicious and easy clean up meal to pull together.
I've inlcuded a from-scratch burrito spice mix if you prefer to make your own, And look, I think they're actually taco bowls, but for some reason our fam calls them burrito bowls.
Burrito Spice Mix
Combine
2 Tbsp paprika
1 Tbsp onion powder
1 Tbsp garlic powder
2 Tbsp cumin
3 Tsp dried oregano
2 Tsp chilli flakes
pinch of cayenne pepper
Heat a lug of olive oil in a pan, add 3 tbsp of spice mix and 500g of beef mince. Stir until cooked through. Add 1 can of drained kidney beans and stir through. I do my kidney beans separately though, as not everyone likes kidney beans.
For the bowls...
Tortilla strip chips
Chopped up ice berg lettuce nice n chunky
Smashed avo into guacamole
Grated cheese
Sour Cream
Diced tomatoes and cucumbers
Brown rice
Spiced Kidney beans
Spiced Burrito Mince
